ESPRESSO MARTINI JELLO SHOTS

Espresso Martini Jello Shots

Makes 18-19 shots

INGREDIENTS:

1 cup cold brew coffee (I used Stōk Cold Brew Decaf (Not Too Sweet))

2 packets of gelatin

1/2 cup Kahula (or any coffee liqueur)

1/2 cup Vodka

Topping:

1 cup heavy whipping cream

1/2 teaspoon vanilla extract

1 tablespoon powdered instant vanilla pudding mix

1/8 cup powdered sugar

2 tablespoons Irish cream liqueur

2 tablespoons Kahula (or any coffee liqueur)

2 teaspoons instant coffee mixed with 1/2 teaspoon water (should be fully dissolved and thick)

Garnish:

Mini chocolate chips

DIRECTIONS:

Add cold brew coffee to a medium sized bowl and sprinkle over packets of gelatin. Whisk until dissolved and set aside to thicken for 15 minutes.

Microwave mixture for 30 seconds, just to heat to lukewarm.

Stir in Kahula and vodka.

Pour mixture into shot cups and refrigerate.

For the topping:

Add heavy cream and vanilla extract to stand mixer and beat to soft peaks, then add in pudding mix and powdered sugar and beat to stiff peaks. Add in the Irish cream, Kahula, and instant coffee paste and mix till incorporated.

Once jello is set, spoon or pipe about a tablespoon of the topping on each shot. Spread evenly with the back of a small spoon, and top each one with three mini chocolate chips.

Keep refrigerated till serving.
